The antioxidant profile of beetroot

Beetroot is an exceptionally rich source of antioxidants (most notably betalain pigments - responsible for the deep red colour of beetroots). Betalains are an important phytochemical present in beetroot juice that have been shown to benefit cardiovascular health. These nitrogen-containing colour compounds have been shown to protect cells from oxidative damage and to improve blood lipids levels.
